Day 6 of Insanity/P90X Hybrid… it’s going.

Clean Eating “Oreo” Cookies(Makes 16 cookies or 8 sandwiches)
Ingredients
Cookie Ingredients
8 oz. slivered almonds made into almond flour
1 cup unsweetened cocoa powder
1/3 cups honey or maple syrup (I used maple syrup)
1/3 cup solid coconut oil or organic butter (I used coconut oil)
1 large egg
1 tsp. vanilla extract
Filling Ingredients
1/4 cup solid coconut oil or butter
1/3 cup unsweetened cocoa powder
3 tbsp. maple syrup
1 teaspoons pure vanilla extract
Directions
Step 1 – In a large mixing bowl, whisk together the almond flour and cocoa powder.
Step 2 – Pour in the honey, coconut oil, egg and vanilla extract and blend will with a wooden spoon.
Step 3 – Using your hands, form walnut sized balls of dough. Flatten them on the cookie sheet. They will not spread or rise during baking, so the shape you create is the shape you end up with after baking. The dough can be a little sticky…Step 4 – Bake at 350 F. for about 15-20 minutes, or until completely cooked through.
Step 5 – While the cookies bake, mix all the filling ingredients together in a food processor or using an immersion blender.
Step 6 – Allow the cookies to cool after baking and then create your sandwiches using the filling.
NOTE: You can adjust the thickness of the filling by using more or less cocoa powder. Just keep in mind that as it sits, it will thicken more. It takes a few minutes for the cocoa powder to really absorb the liquid.

Thanks! I recently switched over to a new blog over here. Be sure to follow that one instead of this one!

I highly recommend insanity! It really forces you to push yourself harder. Also, I feel like it’s a very realistic work out video with the group actually struggling, sweating, and breaking when they need to as opposed to other work out videos where they all look happy and actually stick with the workout throughout the video without much breaks.

I highly advise you stick with a diet/nutrition plan while doing the workout to see fast results. Also, I advise you to take it slow. Don’t try to be a gunner and do everything all at once. You’ll improve over time, I promise :)

Big Changes for the New Year!!

HAPPY NEW YEAR to all you wonderful, fitastic people out there in internet land! I hope you all had a wonderful New Year’s Eve and an even better start to the new year!

This will be my LAST post on this blog. I’ve decided to start a new fitblr that will be more fitness centric and much less “thin.” It will focus on nutrition, overall health, and fitness with a bunch of sexy pictures of fit men and women to motivate you. I’m shooting for a more overall health blog as opposed to an image centric blog, which I feel this has become. (Also, it’s REALLY annoying when I reblog those “reblog if you’re a fitblr!” posts and my personal blog that isn’t weight loss oriented shows up…)

I will keep this open as a reminder of what I have achieved and how much I have matured in my journey through health. Happy New Year and good luck in your health endeavors!! :)
